RASPBERRY CRISP ICE CREAM

In all of my seventeen years of life, I have NEVER tried my hand at ice cream making. But seeing as it's summertime and I absolutely loathe the heat, I figured I'd give it a shot.
I discovered this delectable recipe on Pinterest and immediately decided that it was perfect. Not only does it combine my two favorite things (fruit and ice cream), but it also calls for some crisp, which, if I'm being completely honest, is my kryptonite. So, if you ALSO find yourself succumbing to ice cream with crispy pieces inside on the regular, I suggest making this incredible batch of ice cream yourself.
Without further ado, let's make some ice cream!

You Will Need...
For the brown sugar crisp:
1/3 cup of all purpose flour
1/3 cup of rolled oats
1/4 cup of brown sugar
1/2 teaspoon of cinnamon
3 tablespoons of butter, cold
For the ice cream:
1 14 ounce can of sweetened condensed milk
1/2 tablespoon of vanilla extract
1 tablespoon of lemon juice
1/4 teaspoon of salt
4 ounces of cream cheese, softened
2 1/2 cups of heavy whipping cream
About 2/3 cup of raspberry jam
Directions:
For the brown sugar crisp:
Step 1: Preheat the oven to 350 degrees Fahrenheit. Line a small baking sheet with parchment paper.

Step 2: Whisk together the flour, brown sugar, oats and cinnamon in a medium-sized mixing bowl.

Step 3: Work the cold butter into the dry ingredient mixture until it forms a crumble.
(Note: I'm not entirely sure why, but my mixture turned out to be a little stickier than planned. (I think) I fixed this problem by adding a little more flour and a little more oats. After it had baked for a while though, I was able to crush it up a little more so that it was more like a crumble.)
Step 4: Spread the crumble mixture on the prepared baking sheet. Bake for 10-15 minutes OR until golden brown.

Step 5: Remove from the oven and allow to cool completely. Set aside until you are ready to assemble the ice cream.
For the ice cream:
Step 1: Whisk together condensed milk, vanilla and salt in a small bowl. Set aside.

Step 2: In a large mixing bowl, beat the cream cheese on high with an electric mixer until it's smooth and creamy.
Step 3: Turn the mixer to low and slowly incorporate the heavy whipping cream.
Step 4: Once all of the cream is incorporated, turn the mixer to high and whip until stiff peaks form (about 3-4 minutes).

(Note: I'm sure these weren't the ideal "stiff peaks" that were meant to come out of this, but they worked just the same.)
Step 5: Add half of the whipped cream cheese mixture to the condensed milk mixture. Whisk to combine.

Step 6: Add the condensed milk mixture to your bowl of whipped cream, using a spatula to fold the whipped cream into the condensed milk mixture until it's smooth and no streaks of whipped cream remain.
Step 7: Pour half of the mixture into a 9 or 10-inch cake pan (A loaf pan works fine, too).
Step 8: Set the pan and the remaining ice cream mixture in the freezer for 15 minutes to set slightly. Once set, remove and begin assembling your ice cream.
For assembly:
Step 1: Dollop about 1/3 of a cup of raspberry jam over the ice cream in the pan. Use a spoon to spread it evenly across the top.
Step 2: Sprinkle the top with 1/2 of the crumble mixture
Step 3: Dollop the rest of the ice cream mixture on top and use a spoon to smooth.
Step 4: Dollop the remaining jam across the top of the ice cream and use a knife OR the back of a spoon to create pretty swirls.
Step 5: Sprinkle with remaining crumble mixture.
(Note: I actually didn't end up using all of the crumble mixture, but if you prefer your ice cream crunchy, it's certainly the right amount to make. If, however, you're like me, you might find it easier to cut the crumble recipe in half so that it doesn't make as much)

Step 6: Cover with plastic wrap and set in the freezer for about 5-6 hours before serving.
